La Rubia Margarita

Margaritas are perfect at any time. Am I right? But they are especially wonderful in the Summer heat. This cocktail combines the crisp and refreshing flavors of mango and cucumber with a sweet and spicy chili powder. The chili-lime powder can be found in your produce department, and I usually like to use a low-sodium version.

Once some tequila is added, you’ve got yourself a little personal summer fiesta. I made sure to include a batch recipe, in case you wanted to invite some friends over. Enjoy!

INGREDIENTS:

To serve 1-
 Cucumber pieces, peeled
Mango pieces, peeled
1/8 cup sugar
2 oz water
3 limes slices
2 oz silver tequila
Chili-Lime Powder

INSTRUCTIONS:

Prep-
Wash and peel 1 large cucumber and 1 mango.

Slice the cucumber in medium-sized slices, then quarter each slice.

Holding the mango at the point, run your knife down to slice off the core. Then chop into pieces similar in size to cucumber.

Place mango and cucumber in bowl and toss.

Take 1 lime slice and drag around the rim of margarita glass, ensuring rim is completely wet. Then press rim firmly into chili powder.

Fill glass to the top with ice.

To mix-

Fill 1/8 cup of equal parts mango and cucumber. Then pour into a shaker tin.

Add in sugar and 2 ice cubes.

Muddle ingredients together.

Pour in water, tequila and juice of 2 lime slices.

Shake vigorously, 30-45 seconds. You want the sugar to dissolve and flavors to infuse together.

Strain and pour over ice. Let some mango and cucumber pieces fall into glass. They are super tasty!

HAVING A FIESTA? 

Here’s a recipe for 4+ :

INGREDIENTS:

1 Cucumber, peeled
1 Mango, peeled
1 cup Sugar (organic)
1 cup water
3 limes
1 cup Tequila
Chili-Lime Powder

TO MIX:
In a large pitcher, stir together water and sugar until all sugar dissolves. Place to the side.

Wash and peel 1 large cucumber and 1 mango.

Slice the cucumber in medium-sized slices, then quarter each slice.

Holding the mango at the point, run your knife down to slice off the core. Then chop into pieces similar in size to cucumber.

Place mango and cucumber in bowl and toss.

Ladle mix into pitcher.

Add in juice of 2 limes and tequila.

Stir and ladle over ice in chili-rimmed margarita glass.

Cover pitcher and store in fridge in between servings.Stir before re-serving.
