This salad and fresh dressing is super quick to prep and serve. It’s perfect for any time of the year and sure to satisfy.
I use xanthan gum (found in the baking aisle) to thicken the dressing, but that ingredient is optional. It depends on your preference for dressing consistency but either way, the recipe will work. Serve on the side of Mint Marinated Lamb.
|1 1/2 cup spring salad mix|
|1/2 cup shredded carrots|
|4 oz feta cheese|
|Sweet Onion Dressing-|
|1/2 medium red onion, coursely chopped|
|2 garlic cloves|
|1/4 cup sugar|
|1/8 tsp xanthan gum (optional)|
|2 tbsp white wine vinegar|
|1/2 cup olive oil|
|1 tbsp kosher salt|
|1 tsp ground black pepper|
Prep dressing first-
Add all ingredients into a blender and blend at medium speed for about 30-45 seconds.
Keep in refrigerator until ready to serve.
Fill two dinner bowls with salad mix and top with carrots and feta cheese. Serve with dressing on the side and add desired amount.
