Summer Basil Spritzer

To call a cocktail a spritzer, you need two basic ingredients; wine and club soda/sparkling water. It’s that easy. And you can combine your favorite fruits and mixers to make this your own special recipe. This spritzer combines fresh honeydew melon, lime, and basil to create an instant feeling of ‘Summer by the beach’ with every sip.

One item needed for this recipe, but may be uncommon in some home kitchens, is a cheese cloth. These can be found in the baking aisle at your local grocer, or sometimes, they are found in the cookware department. A cheese cloth will be necessary to extract every ounce of juice from the pulp of the blended melon. This cocktail is perfect to enjoy with Mint Marinated Lamb and Spring Feta Salad.

Makes about 2-4 servings, depending on size of glassware


16 oz cut honeydew melon (about 4 cups)
1 1/2 cup sweetened pineapple juice
1/8 cup fresh basil leaves
2 small limes, 1 juiced and 1 sliced for garnish
1 3/4 cup dry white white, chilled*
unflavored Club Soda or Sparkling water
*SIDE NOTE: I used individual-sized wine bottles because I knew that only I would be enjoying this cocktail. I didn’t want to open an entire bottle of wine for a couple of drinks. I mean, about 3 years ago, it would have been no problem to finish a whole bottle. But, unfortunately, mother,  wife, and work duties demand a sober…ish mind.



Peel the melon and cut into medium sized pieces. Cut enough to fill about 4 cups

In a blender, add melon, basil, pineapple juice, and lime juice. Blend on medium speed for about 1 minute, or until all melon is completely blended.

Place a sieve over a pitcher, or large bowl.

Place a cheese cloth inside the sieve, covering the entire surface, and slowly pour about 1/2 of the mixture onto the cloth. Do not overfill.

Collect the tops of the cheese cloth and squeeze out juice from the pulp into the sieve. Continue with remainder of mixture.

Add in wine and stir.

Fill a wine glass with ice, then pour in wine mix until about 3/4 full. Top with club soda. Stir, then garnish with lime slice.

Place in refrigerator until ready to serve again. Always stir before serving.
