Summer Fruit Inspired Menu

Summer is winding down and everyone is gearing up for the first day of school, or just anticipating cooler days and fall flavors. But before we leave the hot days behind us, I wanted to pay my respects to the delicious fruits that kept my taste buds refreshed and ready for more Summer action. These recipes are perfect after a long day at the beach.

 

Entrée:

Coconut-Breaded Chicken

    Is there anyway to make it a baked dish. Would I just eliminate the eggs or any other ingredients. Don’t get me wrong I am going to do it fried first but if I can use the same ingredients or add to it then it gives me more choices.

    1. Thanks for comment! You can use buttermilk instead of eggs, but that will thicken the crust. If you’re trying to lighten the dish, I would recommend just eliminating the eggs altogether and make it a two-step process.
