Bacon-Wrapped Peaches with Honey Yogurt Dip

If you’re looking for something new, fresh, easy AND mouth-watering? Well this recipe can interchange as a savory dessert or fun side dish. It’s served with a refreshing Honey Yogurt Dip that can be quickly put together. This recipe is best when served with Easy Lemon-Pepper Chicken Legs and Chorizo-Stuffed Hatch Chilies.

INGREDIENTS:

Yogurt Dip-
8 0z Greek yogurt
2 tbsp honey
zest of 1/2 lemon
Peaches-
4 large peaches, halved and pitted
8 strips bacon
1/4 cup dark brown sugar
warm water
toothpicks
1 tbsp butter

INSTRUCTIONS:

Prep yogurt dip ahead of time-

Spoon yogurt in serving dish or small bowl.

Stir in honey and lemon zest.

Cover and store in refrigerator until ready to serve.

Prep and Cook Peaches-

Wash, half, and pit peaches. Pat dry peaches for excessive water.

Wrap each peach half with 1 strip of bacon. Secure each bacon end with toothpick.

Heat a cast iron grill skillet at medium heat. Melt butter, then turn heat up to medium-high.

Place peaches in skillet, (2-4 at a time, depending on size of skillet) skin side of peach down first.

Cook for 4-5 minutes, then turn over.

In a small bowl, mix brown sugar and water.

Lightly baste each peach with mixture. Over basting will lead to burned bacon and a mushy peach. Not cute.

To ensure bacon fully cooks without peach turning too soft, cover skillet with foil (do not secure) after turning peaches.

Cook for another 3-4 minutes, or until bacon is crisp.
