Before the holidays start cramming all their pies and turkeys down my throat, I wanted to enjoy some lighter fare that was full of flavor and keep my belly full for the day. This menu is based on a lacto-ovo vegetarian diet (vegetarians that eat cheese). I am very much the meat-eater, but once in a while I like to take a break from being a carnivore and really enjoy Mother Nature’s creations… in my belly.
If you’re completely dairy-free, I would recommend substituting a non-dairy cheese or adding shredded carrots to the recipes that call for cheese. Why carrots? 1. they are delicious 2. they had another layer of texture to the dish 3. they also keep you full as they are a starchy vegetable.
